About: The region of Burgundy can owe a lot to Sylvain Pataille. A consulting oenologist for some of the bigger domaines in the surrounding area as well as being a leader in the organic and biodynamic movement in Burgundy, few are as important as him in the region. His Chardonnay, Pinot Noir and beloved Aligoté (of which he makes more than 5 different cuvées) are farmed biodynamically, with low yields and see only a small amount of sulphur at bottling.
