You will find Geneviève and Gilles Azam in the far west on the Languedoc, with vineyards sitting at the top of a 600m summit and sitting perfectly in a natural amphitheatre. The couple now organically farm 30 hectares of vines and produce wines of a distinct minerality not often seen this far south.
