About: Claude Courtois of Les Cailloux du Paradis has 13 hectares of previously abandoned vines in Soings-en-Sologne, near Cheverny which he tends biodynamically, cultivating cult sulphur-free wines from varieties including Romorantin, Pineau d'Aunis, Côt, Pinot Noir and many others. The wines are fermented spontaneously - long and slow - and bottled without racking, fining or filtration. These wines have a cult-following and we love to see how they evolve with age.
